  11. Prepare 1 inch of cinnamon stick.

  13. Prepare 2-3 of green cardamom.
  14. You need to prepare 1/2 cup of scraped coconut.
  15. Prepare 1 Tbsp of oil.

  17. Prepare 6-7 of curry leaves.
  18. Prepare 2 of medium size tomatoes chopped.
  19. You need to prepare 1 of medium size onion chopped.
  20. Prepare 1 tsp of red chilli powder.
  21. Prepare 1 tsp of turmeric powder.
  22. You need to prepare 1/2 tsp of crushed black pepper corns.
  23. Prepare to taste of Salt.
  24. Prepare 1 Tbsp of oil.

Mushroom Chettinad instructions

  1. Soak cashew nuts for 15 mins. Soak poppy seeds for 15 mins. In a wok heat 1 Tbsp oil, add coconut, cumin seeds, coriander seeds, fennel seeds, whole red chillies, soaked cashew nuts, soaked poppy seeds, ginger grated, garlic grated, cinnamon stick, green cardamom, saute for 4-5 mins until it’s browned in colour. Set aside and cool.
  2. Add to a blender and make a thick paste..
  3. In a wok heat oil, add chopped onions, cook until translucent. Add curry leaves and chopped tomatoes. Cook. Add Chettinad Masala and mix well.
  4. Add turmeric powder, red chilli powder, mushrooms and mix all well so that Masalas mix well and oil leaves surface. Add the mushrooms. Add salt and crushed black peppercorns. Stir until well mixed about 5-7 mins. Set aside.
  5. Plate and garnish with chopped coriander leaves. Enjoy with steamed rice.
