Ingredients of Blue Kheer
- Prepare 1 litre of Fullcream/fullfat milk.
- You need to prepare 60 gms of Govindobhog rice/ Ambemohor rice/any white aromatic rice.
- Prepare 2-3 tsp of Vanilla extract.
- You need to prepare 100 gms of Sugar*.
- You need to prepare 4 tbsps of Dried Butterfly pea flower + 6 tbsps hot water (see recipe).
- Prepare For of Garnishing.
- Prepare as requried of Almond slivers.
- You need to prepare Some of Pistachios slivers (see recipe).
- Prepare as needed of Edible flowers (optional).
Blue Kheer directions
- Take 2 tbsp each of dried Butterfly pea flower in a separate glass tumbler and pour about 3 tbsps hot water in each tumbler and let the flower steep (and release it's color) for at least 1 hour or more and strain and add to the kheer while it's cooking..
- Wash and soak the rice for half an hour. Boil the milk and add the rice and the first batch of blue tea. cook for almost half an hour till the rice gets cooked, meanwhile add the vanilla extract too. Keep stirring frequently. Once the rice gets cooked add the sugar and second batch of blue tea and cook for another 10 minutes or so till the kheer thickens to the desired consistency. Pour it in the serving bowl, cool and chill. Garnish it with almond, pista etc. Serve chilled!!!.
