Ingredients of Undhiyu
- Prepare 4 of Potatoes.
- Prepare 4 of brinjals.
- Prepare 200 gms of green peas.
- Prepare 100 gms of purple yam.
- You need to prepare 100 gms of regular yam.
- Prepare 100 gms of pigeon peas.
- Prepare 100 gms of ivy gourds.
- You need to prepare 100 gms of flat beans.
- Prepare 100 gms of hyacinth beans.
- You need to prepare 100 gms of besan methi vadi.
- Prepare 1 cup of tamarind pulp.
- You need to prepare 1 tablespoon of jaggery.
- Prepare 1 bunch of green garlic.
- You need to prepare 1 bunch of coriander leaves.
- Prepare 50 gms of coriander powder.
- Prepare 30 gms of turmeric.
- You need to prepare 30 gms of garam masala powder.
- Prepare 30 gms of asafoetida.
- You need to prepare 30 gms of red chilli powder.
- You need to prepare 1 teaspoon of salt to taste.
- You need to prepare 1 teaspoon of ginger paste.
- Prepare 1 teaspoon of green chilli paste.
- Prepare 1 cup of grated coconut.
- You need to prepare 250 gms of refined oil.
Undhiyu step by step
- Cut all the vegetables and deep fry potatoes, yams, brinjals etc..
- Now in a deep Kadai, put all the beans and peas to cook together in some oil and asafoetida.
- Let all the beans and peas cook for sometime in oil and then put in all the masalas along with the green garlic paste, ginger paste and green chilli paste and salt.
- Let all the masalas cook properly together and add tamarind pulp and jaggery into the mixture.
- Once all the masalas are cooked properly, add the remaining fried vegetables along with the methi vadis.
- Mix everything thoroughly and let it cook in the pressure cooker for 10 to 15 minutes.
- After the said time, open pressure cooker and garnish it with some grated coconut and coriander leaves and your undhiyu is ready to eat..
