  1. Put all Crema ingredients in a blender or food processor and blend well..
  2. Preheat fryer to 320°.
  3. Add Milk and Eggs to a large bowl and mix well.
  4. In another large bowl mix Batter/Flower with the Cumin, Cayenne pepper, Salt, Garlic powder, and Old Bay seasoning.
  5. Cut the fish fillets in half; Batter by dipping in the Egg and Milk mixture, then in dry Batter mix or Flower.
  6. Put the Fillets into the fryer when ready (about 6 at a time depending on the fryer size) and cook about 6 minutes, or until the fish floats and is flaky and tender..
