  1. Wash the vegetables. Remove the stems from mirchi and just slit mirchi. Slit the egg plant at the bottom..

  5. Heat another pan add mustard seeds let it splutter. Add the ground paste and sauté it well. Add garlic paste, turmeric powder, Dhaniya powder, chilli powder and sauté it together. Sprinkle some water and sauté again. Add two tsp of coconut butter, add tamarind water and let it come to boil. Add the sautéed veggies, salt and let it all cook for 5 minutes or until the desired consistency. Garnish with fresh coriander and serve it with rotis/Biryani/steamed rice..
